The other great thing about bacon is that its AFFORDABLE. Most of us can't go around buying duck fat, feasting on legs of lamb, savoring high-end sushi, and enjoying foie gras regularly - however a pound of cheap bacon is $3, and cheap bacon can still be excellent.
