So my boss today made some candied bacon. He took the bacon strips and slow cooked them in the oven while brushing them with a maple syrup-chipotle glaze, until the bacon was cooked and the glaze crystalized. Awesome. Were thinking of giving some to our pastry chef and having her dice it up and fold it into housemade blackberry ice cream, or making some candied bacon doughnuts. Thats right, envy me.
