I friggin love bacon mostly with eggs or pancakes and lots of maple syrip
But just last weekend I made breakfast for me and the wife she ate 3 strips of bacon and threw out the day ate the rest of a hole pack of it ,and enjoyed every minute of it
Should i have just droped dead the next day or gained a few pounds instantly ? LOL

I just had a cheese quesadilla with the 25 cent additional bacon. Man, they packed that thing full of it. It was like wtf candy.

take a pound of bacon, and slowly cook it in pork stock..After about three hours, strain it and cook it down to almost nothing.  Put remaining jus in the fridge, and the next day you will have half a cup of bacon gelatin, otherwise known as bacon crack.(haven't tried it, but sounds tempting)

Bacon wrapped scallops with maple syrup is very similar to the dish I made with the bacon jam.  The jam had a hint of maple and orange in it.  And hefdaddy, you are correct, any chef worth his weight in bacon sports wood at the thought of bacon.

One thing I haven't done yet is pay homage to bacon's Italian cousin, pancetta. For those who are unfamiliar, it is the same cut of meat, cured in a similar way, but not smoked.  It is the perfect alternative for those who don't like the smoky flavor(though I don't comprehend why). So, for pancetta,  :hefdaddy.

somehow missed this, but pancetta ftw. I cooked up a nice batch of Spaghetti Amatriciana last week and was mildly bummed out that the local supermarket didn't have pancetta and I had to substitute bacon in. Still delicious though :hat

On a related note, I think I will use the remaining bacon from that cooking session to garnish a grilled cheese :metal
