I won't watch slasher movies (Friday the 13th, Saw, etc.).
I won't watch foreign language movies (whether or not with subtitles).
I'll generally steer clear of any movie that is more appropriately called a "film."
Every Quentin Tarantino movie I've seen I thought sucked, and many of those I haven't seen I think look stupid.
I won't watch Fast & Furious movies, and I've generally been done with superhero movies for at least 5-6 years (the problem here is that my wife likes those movies, so they turn up on my TV a lot as a "falling asleep" movie). As a result of this, I know that the F&F movies are about the dumbest things ever made.
From 2000 to the present, I've seen only 19 of the 142 movies nominated for a best picture Oscar (obviously, I don't avoid them BECAUSE they're going to be nominated, so I'm not sure what to make of this).
Saw series is an excellent choice. I will never see them. Here's a shocker for you all. I have never seen the Godfather films and probably won't. Mafia films just aren't my bag.
Are you related to my wife? The first one is my favorite movie of all time, and my wife and daughter just aren't interested.
I swear upside down and sideways that my wife and I watched the first Godfather movie sometime in the '90s. She swears with equal vociferousness that she hasn't seen it. Either way, neither of us has ever had any interest in seeing the second one.
I have never seen Titanic, and am now just stubborn about seeing it.
This is a top 10 movie for me. If you're ever in CT, come to my house. We can watch it in 3D.

Me three, but I find the story of the Titanic very intriguing, and the Jack/Rose story is good enough as background.
I've watched "Saving Private Ryan" in the theater; I was on a date and the first 45 minutes or so was so intense I sweat through my shirt (embarrassing! Thankfully she was no better). I've put off watching it again, even though it was excellent, just because it was that intense.
I went to see SPR in the theater with my wife and sister. About 5 minutes into the opening D-Day scene, my wife got up and walked out. I recall knowing what to expect, but she just couldn't handle it. I went back in and told my sister what was going on, and she said she was staying. I wanted to stay but felt like I couldn't abandon my wife, so I missed the movie, and I've never gone back and watched it (even though I still do).
