Swiss definitely has its place in the universe. I wouldn't want to live in a world without grilled ham and swiss. Depending on which direction I go it might well wind up on a burger, as well.
For cheddar I was particularly fond of Collier's Welsh Cheddar, but TJ's stopped selling it. Damn tasty cheese and made a fantastic potato soup.
There's really not much cheese I don't like. I have no use for American, and I really dislike brie. Other than that I'm good to go. Cow, sheep, goat, beaver, buffalo, all fine by me.
