I don't know why but the first thing that came to my mind when I heard the album title was Fantastic Mr. Fox.

Anyway, my guess is that "The Astonishing" is the nickname of a character on the album, probably the protagonist, to make him more specific.

Now that they embrace the "the", I'd like a namechange to The Dream Theaters as well. Should do well with the mainstream, might even lead to the Grammy award this time.
