I've only glanced at the sheet music for New Age piano stuff, but I'm sure Brickman and Lanz are easier to play than Liz or Suzanne.  Not that "more interesting to hear" always equals "harder to play" but there's at least a little correlation here.

Every once in a while, I think about picking up a book, study the transcriptions to see what they've done and how they did it, but I never do, because I just don't have the time to study written stuff like I used to.  I find it more fun and fulfulling to spend my available piano time just noodling, letting my fingers figure out what they want to do, and try out new voicings and fingerings that way.  Half the time someone asks me to play the piano, I'm just improvising and noodling around anyway, but people seem to like it.  Someone even asked me once if what I'd played was George Winston, because it sounded like it.  I took it as a compliment (which it definitely was) but no, I was just messing around.

After a while, you have to leave your influences behind and just let your fingers work it out.  At least that's how it works for me.  Mine seem to know what they're doing more than I can tell them, anyway.

Weather Report would be another. Although many could claim what Jaco Pastorius was doing, playing bass-guitar like a guitar, would be considered music with guitar.

Enya.

There's some guitar in one song on her very first album, from 1987. Since then, she only had guitar in one other song, on her 2008 album.
