As much as I enjoy Death's cover, the original version can't really be topped. The drum production makes my head explode.
It just screams heavy metal. Every damn bit of it. For those who are unfamiliar, here's the original with its classic video:

Oh, don't get me wrong. The Judas Priest original slays and is very worthy of the title "the song that defines heavy metal." But personally, I consider Death's cover of it very slightly better in terms of raw power and energy. Truthfully, Death's cover of Painkiller is the only cover I can think of that, in my opinion, improves upon the original.

Either Master of Puppets or Hallowed Be Thy Name. Both of those songs showcase everything that defines metal, from the pounding riffs, thundering drums, those kickass melodic sections and of course the flying solos. It's gotta be one of those two.

Hallowed Be Thy Name is definitely a good pick. Also, as much as I have outgrown Metallica, I still think The Call of Ktulu is a great example of a fine metal instrumental. Another good one would be Halloween by Helloween. And while Alison Hell by Annihilator is kinda silly, it is classic 80's metal at its best. Megadeth's Holy Wars, Ozzy's Revelation Mother Earth, Black Sabbath (the song), Judas Priest's Electric Eye or Painkiller (both are equally awesome), the entire King Diamond Abigail album :metal, Slayer's Seasons in the Abyss (the song)... there are so many worth mentioning.

I've always thought the song Master Of Puppets was really boring. Its a 7 minute thrash song that would be better off as a 3 minute piece instead, way too long for its content and one of Metallica's more boring guitar solos. So I don't really think it fits "very soul of metal".

No, seriously, are you trolling? The lyrics to Master of Puppets are about addiction...to anything, and how the addiction can control a person similar to how a puppet master controls a puppet. The lyrics are meant to show how helpless people who are stuck in addictions can feel.

Ok, maybe they mean something, but when I see soul, I'm thinking of more emotion.  Maybe it's Hetfield's particularly flat voice, but I just get nothing out of the song, it's just fast riffs to me with a fairly generic break and an overrated "token" speed solo.  And there's much more convincing songs about addiction.

I'm going to go for a slightly different angle. I'm going with Love? by Strapping Young Lad. It's heavy, got awesome riffs, great double kick work and an epically singable chorus. On top of that I have every reason to believe that the lyrics are about what metal is about. You know that feeling you get when Maiden are just about to go on stage - the intro tape is finishing and the pyro is just about to go off and the room has gone apeshit? Or when 50,000 metal fans are all singing along to a chorus about how we're going stand up for the metal we love and don't care about what the consequence is? Or the fact that it feels like every single one of those people has been a lifelong friend. That's love, baby whether you're too "metal" to admit it or not. Metal = Love. Strapping Young Lad are arguably the heaviest band the world has seen so far. Therefore Love? by SYL is the ultimate metal song.

No it isn't.  It's a pretty damn good one.  Trying to order all the metal songs out there into a top 100 list is damn near impossible, but they do a good job of trying to bring some sort of objective list out of it.  The lists on that site are fantastic.
