They frequently cite Wishbone Ash as a big influence.

I've noticed Dave Murray and Adrian Smith both apply a lot of bluesy licks in their solos even though the music is hard rock/heavy metal.  So Clapton and Hendrix, Beck, could have some influence on them too, amongst a few others.
On the most part Iron Maiden are innovators, so they are mostly influenced by themselves.. Steve Harris took a whole new approach to the bass..

You can also get an idea by their cover choices during the '80s B-Sides.

Jethro Thull as pointed out above need to be mentioned

Yes, UFO was a big influence, especially on Steve. He was heavily influenced by Pete Way, in his playing style and look.

I always knew that Wishbone Ash and Thin Lizzy were big influences on Maiden, but this thread got me further interested in them.

Any fan of those two bands who would care to suggest a starting point? maybe a Greatest Hits if there's a comprehensive and faithful one, just to not get lost on countless albums...

You can clearly hear the influences in these 2 tunes that I posted earlier: Warrior by Wishbone Ash and Emerald by Thin Lizzy.  Not only musically, but lyrically - both these songs are about soldiers, a subject matter that Maiden took closely to heart.  Warrior is from the album Argus, and Emerald is from Jailbreak.  You can't go wrong with either album.

For Dave Murray, Paul Kossoff from Free.  He even bought one of Paul's old guitars after he died.

For Bruce, Deep Purple "In Rock" supposedly changed his life.

For Harris, we didn't mention Genesis yet, but he often cited Genesis as an early influence (and I think there are some lyrical allusions on The Sign Of The Cross).

Also for Wishbone Ash, I'd look into their 2 live albums:  Live Dates and Live Dates II
