Title: Help with strat bridge.

Ok, so basically the bridge piece on my high e is so low that when I fret a string, the string touches the pickup and all I get it buzz. How to a make the piece higher?

I assume it looks like this one:

If so, those screws at the end of the string saddle (opposite the spring end) are used to raise and lower that individual string's saddle.  They require a very small allen wrench.

Should I just tune the string real low and then make it higher? Or do I really need to unstring it and then restring it?

You should be able to just loosen your string a little and then re-tune it when you've raised it to where you want it.
