All of Lacuna Coil's stuff uses seven strings
I believe all the songs of off Shogun by Trivium use seven strings (I know Torn Between Scylla and Charybdis does, and that's a cool song).
Beyond that, I have no idea.

"burn it to the ground" by nickelback. :lol it is in B and it actually is kinda fun to play. but as previously mentioned, nevermore and trivium have some really cool shit. other bands that i know of off the top of my head that utulize 7 string guitars (or 6 string detuned to B or A) are korn, slipknot, steve vai, rusty cooley, all shall perish, and pretty much every other black/death metal band.

Type O Negative is 6-string tuned down to B, so you could just use the 7 string for it.
I also recommend Nevermore. They're my favorite 7-string band.
Also, Fear Factory. Soul/Demanufacture era are standard 7 string tuning, while later
stuff is tuned down a step. The new album has 8-string shit on it (sounds like it's tuned down as well,
which would put it at F...which is just fucking silly :lol)

All of the Addicted album by Devin Townsend. He play's open tuning, but the songs are simple enough for easy playing on 7 string, bar one or two MASSIVE stretches. :P
Think it's mostly in B, one in Ab, one in Db, one in C. Good fun even if it's not difficult to play.
