Three pounds and only NINE slices?

A normal pound has what...about 15-16 slices?  I like thick cut bacon, but that's got to be about 1/2 inch thick?  Not sure I'd be down for that.

I have an iron skillet and I used to use that for bacon (and used to collect the fat for later use; stole that from my grandma!) but I've taken to baking it lately.   Doesn't taste EXACTLY the same, but not enough drop off (it's still bacon!) and it's a LOT quicker (you can cook more at once) and cleaner (bacon fat has a mind of it's own when it's at 300 degrees and is flying out of an open frying pan!)

Was shopping a few weeks ago and came across what was labeled as 'Steak cut bacon'. The package is over 3 lbs and has a whopping 9 slices in it. Yes, 9. The package suggests that grilling is the optimal way to cook it. Plan on doing that fairly soon. They were blowing it out so that package cost me like $13. I think it was 50% off.

So, my mom's side of the family is Hungarian (maternal) and Ukrainian (paternal).  Gram used to always call herself a "gypsy"; I've come to know that's not a universal complement, but nonetheless...

She used to eat something called "Selena bread" or something like that:   you'd take fresh rye bread, you'd cook a chunk of bacon like that over a gas stove, then basically press the meat into the bread to let the bread absorb the juices. Then you'd put a slice of the meat and some fresh onions and tomatoes (green peppers if you had them) and eat the open-faced bread.  Sounds sort of gross as I type it, but the last time I had it was like when I was 10 or so and I can STILL remember it.  Tasted like the best BLT you ever had. 

EDIT:  SZALONNA BREAD!!!!!!!   Ours was close to this; not exactly, but close enough!  I want this now!!!  (Brother Matt needs to wash his hands, though.)

Our cookie sheets has risen edges.  It's not the type that is flat with no edges.

Bacon doesn't generate that much grease to fall off the sheet. That's what I use as well, but most of the time I cover it in foil for easy clean up.

I'd almost say treat it like pork belly, give it a hard sear and braise it in it's own juices with some aromatics.

At work I definitely use a sheet pan, for volume it's the only option unless you got a flat top and want to clean it.

At home, usually a saute pan since I'm just cooking a few pieces for myself.

The local bar I talk about a lot has really good food.  The head chef makes a special meatloaf every couple weeks, they have really good steak tips, and on occasion he makes a really good steak tips in a marsala wine sauce.  The other chef is the queen of soups.   Yet... when we go in for trivia night, I probably order their BLT like 90% of the time.   It's just so good.  Fresh bread, local tomatoes and lettuce, and perfectly cooked bacon.  It's an art, my friends.

If you are baking bacon its best to put the stuff on a wire rack that's placed on the sheet cookware.

I'm thinking about making my own bacon at some point in the future since I can't get decent english cut here in Sweden. Just need to figure out a good method for stovetop smoking.
