I've never heard of a chicken flat.

I have sometimes referred to the "drum" section as a "mini-drumstick", but the flat section is just the "wing".  I prefer the "drum" simply because it's easier and faster than working around the two little skinny bones in the flat section.  When you're dealing with tiny little pieces of chicken, getting more into your mouth per second is important.  Give me a plate of actual thighs or drumsticks any time.









Still not sure what any of this has to do with corn flakes or Neil Peart.   ;)

Today was my first of a few days off by myself and I ordered wings from a local pizza place. Reaffirmed my love of flats. They are just more consistent with the meat tenderness and skin crispiness.

(and I'm not talking about how to cook them, but how to eat them, with a quick twist of the cartilage at the end, you can seamlessly pull both bones out, and have a spectacular boneless bite of chicken)
