For obvious reasons I couldn't taste the pairings, so I just had to trust the other guys and go with memory. Usually you can counter the dominant flavors in beer with the pork dish's accompaniments, like a pickled apple slaw we served with the tenderloin, kinda cut through and balanced the bitterness and hoppiness of the beer.

We try to keep everything local and/or seasonal. Beer and wine are easy in Cali, as is fish, produce, and cheese. The meats get really expensive though to get the high end product.

Why not go all out. Take a sausage link, make a pig in a blanket with it, then batter it, bread it with............crushed up cinnamon toast crunch cereal, deep fry it, and use the maple syrup as a dipping sauce.

Anyone else been to Slaters 50/50 Burger before?  Check out this vid...  their burgers are awesome.  You build them component by component starting with the meat.  The original recipe is 50% beef, 50% pork.  One of the options though is 50% beef, and 50% bacon  :hefdaddy
