On an electric guitar probably Chet Atkins or Roy Clark in the mid 1960's . Jazz there was Alan Holdsworth and Al DiMiola  and a guy named Danny Gatton who was a fusion - rockabilly guy in the mid 1970's. In rock - metal one might say Uli John Roth , Schenker , Ritchie Blackmore. There are others I'm missing for sure.

I love Ritchie Blackmore's playing but I don't really think of him as a shredder. Admittedly I've only heard a handful of Deep Purple albums and a Rainbow song here and there; any examples of him really ripping it up that I maybe just haven't heard?

You can't shred on classical or acoustic guitar. Shred is fast playing coupled with the extreme distortion that only amplification can bring.

Just to clarify once again, you can play fast on acoustic instruments, but it's not shredding.
