Kirk Hammett is the most humble and down to earth member of Metallica.

Will have some to add later when I have more time but Derek Sherinian and Craig Goldy are awesome.  Derek Sherinian is hands down, the coolest rock stars I have ever met.

Mark Knopfler. Extremely nice and humble person.

Alexi Laiho. I know he pissed many DT fans off with his comments about the band, but he's actually a very sweet, funny and down-to-earth guy.

Agree with the previous mentions of John Petrucci and Dave Grohl. Oh, and I'd probably add Jordan Rudess from the DT camp.

When they played here at my town, all of them were around the place, chatting with everyone.

I met Ryo from Spock's Beard once. He was playing with an all star cover band at a bar in Malibu with my buddy's band playing sets in between their sets. Anyway... he was really cool.
I just don't understand what they were trying to achieve with any part of the song, either individually or as a whole. You know what? It's the Platypus of Dream Theater songs. That bill doesn't go with that tail, or that strange little furry body, or those webbed feet, and oh god why does it have venomous spurs!? And then you find out it lays eggs too. The difference is that the Platypus is somehow functional despite being a crazy mishmash or leftover animal pieces
