Lonestar, what is your favorite cut of steak?  Also, as noted by my many questions for you in the last couple of years, I'm also always looking to learn more about cooking.  I've looked into culinary porgrams at the local colleges and it always includes some "restaurant management" part that you have to study.  I have no desire to manage a restaurant, I just wanna learn to cook better.  Classic techniques, different methods for doing things that might make my current techniques work better or replace my current techniques (i.e. when I learned the proper way to dice an onion, it has gone SO much easier every since), or anything.  I want to be able to craft something awesome, from my own knowledge, not necessarily always follow a recipe.  That said, how much of the "restaurant management" part of your culinary studies do you really engage in regularly?
For me, the striploin, or New York cut is my favorite.  The filet is to bland, and the ribeye is too fatty, the filet has just the right balance.

As to the management thing, it does play a big role in my day to day job, especially around menu change time.  Being able to cost out the menu is a crucial part of a restaurant's success, and that is the big thing you learn in that part of culinary school. By maximizing the profit of each plate through portion control, selective buying, proper staffing, and proper development, you make yourself look good on the P&L sheets at the end of the week.

I'm always willing to try new things people offer me, I just hope nobody ever offers me haggis or balut.  Lots of stuff I hate, beets, oysters, coffee, dill pickles come to mind.  The only thing I feed to strangers that I wouldn't to someone I like is when a person orders a well done steak, they get the shitty cuts of meat.  Even then, a friend or a stranger would never know it was a shitty cut because all the life has been cooked out of the thing all ready.

It's a very fast paced, high stress enviornment, and when the day is done, the only thing open is bars.  Bars and smoking go hand in hand.  The habit gets passed down through each generation of workers.

I think the best part about me is that I've finally acquired the ability to live in true honesty, not having to put on different faces for different situations, but learning to be at ease with myself in most situations.  I think it's something that a lot of people never learn, and I am glad I have.  Having a huge cock is really cool too.

Interesting. I guess the folks in the kitchen get more slack for that.  My brother got sacked a while back for smoking during his mandatory lunch break.  I was unaware, but waitstaff apparently have different rules.

Yep, at every place I worked at, smoking was prevalent throughout the place, both front and back of the house.

Oh, I know what he meant, but some places now bar people from smoking during their breaks.  Given the climate where he lives, I'm surprised you can smoke cigarettes anywhere.  (dope seems to be acceptable any place, though)

I'm sure some workplaces do, but it hasn't gotten around to the restaurants yet.  Many cities have the "no sidewalk" smoking thing now too, which is kinda annoying but I just ignore it like everyone else.

In Dallas it seems somewhat common with waitstaff.  I've personally never noticed a waiter that smelled like Marlboros, but apparently there's a concern regarding it.  Of course, I've been bothered by waitresses reeking of shitty perfume before, but nobody seems to mind that.   >:(

(I still get misty eyed every time I watch it)  Needless to say gramps wasn't too happy, and I was just stunned.  I was on the fence about which school I liked more, and it seemed to me that God himself reached his hand down to touch me and say"you shall be a Cal fan."  On the way out of the stadium, surrounded by a shitload of pissed Stanfurd fans, my grandpa pulled me aside to tell me,"RJ, I want you to remember this moment.  30 years from now, every asshole in the country is going to say they were here today, but you were.  What you saw is a once in a lifetime moment, it will never happen again."  I feel that he gave me the deep love of sports by setting aside his anger over the game to help hone the love of sports in his grandson, showing me that winning and losing isn't everything, but being in the moment with family is.  He passed away about five years ago, and each of his grandsons had a similar story to tell at his funeral.  I miss him dearly to this day.  As to favorite players, they change from year to year, but Montana and Will Clark will always have a place in my heart, but pro sports always take a backseat to the Cal Bears, they are my passion.  I am not kidding that when I die, I want my family to scatter my ashes at Memorial Stadium, I want to rest where I know I am always at peace, in a state of love, and always with family.
